WELLKHANA KITCHEN RECIPE

Ingredients:

For the Tofu:

  • 1 (14 oz) pkg of super firm tofu

  • 1/2 cup of basil pesto*

  • 1/4 teaspoon salt

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1 Tablespoon avocado oil

For the Basil Pesto:

  • 2 packed cups of fresh basil

  • 1/2 cup pine nuts

  • 3 garlic cloves

  • 3 tablespoons nutritional yeast

  • 1 tablespoon lemon juice

  • 1/4 teaspoon salt

  • Water as needed

Instructions:

  1. Preheat: Preheat your oven to 425º F and line a baking sheet with parchment paper.

  2. Prepare Tofu: Drain and pat the tofu dry with a paper towel. Crumble the tofu into small pieces onto the parchment-lined baking sheet.

  3. Make Basil Pesto: Place all basil pesto ingredients in a food processor and blend until you reach the desired consistency. Add water as needed.

  4. Combine: Set aside two tablespoons of pesto and add the remaining pesto to the tofu. Toss the tofu with the pesto, avocado oil, salt, garlic powder, and onion powder until well coated.

  5. Bake: Bake for 20 minutes, then stir and bake for an additional 10 minutes until the tofu is crispy.

  6. Cool: Remove from the oven and let it cool. Toss the cooled tofu with the remaining pesto.

  7. Serve: This delicious pesto topping works well on cooked pasta mixed in with roasted vegetables or even as a salad topper.
