Ingredients:
1 tablespoon extra virgin olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 cup Arborio rice
1/2 cup dry white wine (optional) or extra vegetable broth
4 cups vegetable broth, warmed
1 bunch asparagus, trimmed and cut into 1-inch pieces
Zest and juice of 1 lemon
2 tablespoons nutritional yeast
Sea salt and black pepper, to taste
Fresh parsley, chopped, for garnish
Instructions:
Sauté | Heat olive oil in a large skillet over medium heat. Add onion and garlic, cooking until soft and fragrant, about 3 minutes.
Toast the Rice | Stir in the Arborio rice and cook for 2 minutes until lightly toasted.
Deglaze | Add white wine (if using) and cook, stirring, until mostly absorbed.
Cook the Risotto | Add warmed vegetable broth, one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more. Continue this process for about 20 minutes or until the rice is creamy and tender.
Steam Asparagus | In the last 5 minutes of cooking, stir in the asparagus pieces to cook them until tender but still bright green.
Add Flavor | Stir in lemon zest, lemon juice, and nutritional yeast. Season with sea salt and black pepper to taste.
Serve | Divide the risotto into bowls, garnish with fresh parsley, and serve immediately.
