WELLKHANA KITCHEN RECIPE

INGREDIENTS:

  • 1 pound silken tofu

  • 1 teaspoon vanilla extract

  • 1 1/2 teaspoons cinnamon

  • 3 tablespoons raw cocoa powder

  • 10 - 12 medjool dates, pitted

  • 1/2 teaspoon chile powder

  • 1 tablespoon maca powder (optional) 

  • 1/4 cup almond butter (optional) 

INSTRUCTIONS:

  1. Prepare:  In a small bowl, add your pitted dates and cover with boiling water. Let the dates soak for 10 minutes.  Drain the soaked dates.

  2. Combine:  Transfer the dates to a food processor or blender along with the vanilla extract, cinnamon, cocoa powder, chile powder, maca powder, and almond butter (if using). Mix until creamy.  Add the silken tofu to the mixture and blend until smooth and well combined.

  3. Set:  Transfer the mousse into small ramekins or other small bowls and refrigerate for at least 30 minutes.

  4. Serve:  Garnish with berries, chocolate shavings, cocoa nibs, or shredded coconut.  Enjoy your stress-relieving chocolate tofu mousse!
