WELLKHANA KITCHEN RECIPE

Ingredients:

  • 1 cup red lentils, rinsed

  • 1 tablespoon coconut oil

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 1 tablespoon ginger, grated

  • 1 teaspoon turmeric powder

  • 1 teaspoon ground cumin

  • 1/4 teaspoon cayenne pepper (optional)

  • 1 can (14 oz) coconut milk

  • 3 cups vegetable broth

  • 2 cups fresh spinach, chopped

  • Juice of 1 lime

  • Sea salt and black pepper, to taste

  • Fresh cilantro, for garnish

Instructions:

  1. Sauté Aromatics | Heat the coconut oil in a large pot over medium heat. Add the onion and sauté for 3–4 minutes until softened. Stir in the garlic, ginger, turmeric, cumin, and cayenne pepper, and cook for 1 minute until fragrant.

  2. Cook Lentils | Add the red lentils, coconut milk, and vegetable broth to the pot. Stir well and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until the lentils are tender.

  3. Add Spinach | Stir in the chopped spinach and cook for 2–3 minutes until wilted.

  4. Season and Finish | Add the lime juice and season with sea salt and black pepper to taste. Adjust spices if needed.

  5. Serve | Ladle the soup into bowls and garnish with fresh cilantro. Enjoy warm!
