WELLKHANA KITCHEN RECIPE
Ingredients:
1 cup red lentils, rinsed
1 tablespoon coconut oil
1 medium onion, diced
3 garlic cloves, minced
1 tablespoon ginger, grated
1 teaspoon turmeric powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional)
1 can (14 oz) coconut milk
3 cups vegetable broth
2 cups fresh spinach, chopped
Juice of 1 lime
Sea salt and black pepper, to taste
Fresh cilantro, for garnish
Instructions:
Sauté Aromatics | Heat the coconut oil in a large pot over medium heat. Add the onion and sauté for 3–4 minutes until softened. Stir in the garlic, ginger, turmeric, cumin, and cayenne pepper, and cook for 1 minute until fragrant.
Cook Lentils | Add the red lentils, coconut milk, and vegetable broth to the pot. Stir well and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until the lentils are tender.
Add Spinach | Stir in the chopped spinach and cook for 2–3 minutes until wilted.
Season and Finish | Add the lime juice and season with sea salt and black pepper to taste. Adjust spices if needed.
Serve | Ladle the soup into bowls and garnish with fresh cilantro. Enjoy warm!
