Ingredients:
2 medium beets, roasted or steamed, peeled, and chopped
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini
2 tablespoons fresh lemon juice
2 garlic cloves, minced
2 tablespoons olive oil
1/2 teaspoon ground cumin
Sea salt and black pepper, to taste
Water, as needed (for desired consistency)
Instructions:
Prepare | Preheat the oven to 400°F (200°C). Trim the ends of the Brussels
Prepare Beets | If using fresh beets, roast or steam them until tender. Let cool, peel, and chop into chunks.
Blend Ingredients | Add the beets, chickpeas, tahini, lemon juice, garlic, olive oil, cumin, sea salt, and black pepper to a food processor or blender.
Adjust Consistency | Blend the mixture until smooth. Add water, 1 tablespoon at a time, to achieve your desired consistency.
Taste and Adjust | Taste the hummus and adjust the seasoning as needed, adding more lemon juice, salt, or cumin to enhance the flavor.
