  • 1 can (14 ounces) chickpeas, drained and rinsed

  • 2 medium carrots, sliced

  • 1 cup diced tomatoes (fresh or canned)

  • 1 cup vegetable broth

  • 1/2 cup dried apricots, chopped

  • 1/4 cup slivered almonds, toasted

  • Salt and pepper, to taste

  • Fresh cilantro or parsley for garnish

Instructions:

  1. Prepare the base | Heat olive oil in a large pot or tagine over medium heat. Add the chopped onion and sauté for 4-5 minutes, until softened. Add the garlic and grated ginger and sauté for another minute until fragrant.

  2. Add spices | Stir in the cumin, cinnamon, turmeric, smoked paprika, salt, and pepper. Toast the spices for about 1-2 minutes to release their flavors.

  3. Simmer the vegetables | Add the carrots, chickpeas, diced tomatoes, and vegetable broth to the pot. Stir well to combine. Bring to a simmer and cook for 15-20 minutes until the carrots are tender.

  4. Add apricots | Stir in the chopped apricots and simmer for another 5-7 minutes, until the apricots are soft and the sauce has thickened slightly.

  5. Serve | Garnish the tagine with toasted almonds and fresh cilantro or parsley. Serve with your choice of quinoa, couscous, or gluten-free flatbread.
