  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/4 teaspoon cayenne pepper (adjust to taste)

  • 4 cups vegetable broth

  • 1 cup coconut milk

  • 1 tablespoon olive oil

  • Juice of 1 lemon

  • Salt and pepper to taste

  • Fresh cilantro (chopped, for garnish)

Instructions:

  1. Sauté Aromatics | Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in garlic and ginger, cooking until fragrant.
